Vegan Lettuce Wraps with Tofu

Main Ingredients
- 1 block Tofu firm, drained and crumbled
- 1 tablespoon Olive oil
- 1 cup Carrots shredded
- 1 cup Red bell pepper diced
- 1 cup Cucumber diced
- 1 head Lettuce leaves separated
- 2 tablespoon Soy sauce
- 1 tablespoon Rice vinegar
- 1 teaspoon Sesame oil
- 1 tablespoon Sesame seeds for garnish
- 2 cloves Garlic minced
- 1 teaspoon Ginger minced
1. Heat the olive oil in a frying pan over medium heat.
2. Add the crumbled tofu and cook until golden brown, about 5-7 minutes.
3. Add the garlic and ginger, and cook for another 2 minutes.
4. Stir in the soy sauce, rice vinegar, and sesame oil. Cook for another minute.
5. Remove from heat and let it cool slightly.
6. In a mixing bowl, combine the tofu mixture with shredded carrots, diced bell pepper, and cucumber.
7. Spoon the mixture into lettuce leaves and garnish with sesame seeds.
8. Serve immediately and enjoy!
