Ingredients 

Main Ingredients

  • 4 bell peppers tops cut off and seeds removed
  • 1 cup dry lentils rinsed and drained
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 cup diced tomatoes canned
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup vegetable broth

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute.
  4. Add the rinsed lentils, diced tomatoes, cumin, paprika, salt, black pepper, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils are tender and liquid is absorbed.
  5. Stuff each bell pepper with the lentil mixture and place them in a baking dish.
  6. Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes, or until the peppers are tender.
  7. Serve hot and enjoy!
