Vegan Lentil Sloppy Joes

Main Ingredients
- 1 cup dry green or brown lentils rinsed and drained
- 1 tablespoon olive oil
- 1 onion finely chopped
- 1 bell pepper finely chopped
- 2 cloves garlic minced
- 1 cup tomato sauce
- 2 tablespoon tomato paste
- 1 tablespoon soy sauce
- 1 tablespoon maple syrup
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 1 cup water
- 4 burger buns toasted
1. Cook the lentils according to package instructions. Drain and set aside.
2. In a large skillet, heat the olive oil over medium heat. Add the onion and bell pepper, and cook until softened, about 5 minutes.
3. Add the garlic and cook for another minute.
4. Stir in the tomato sauce, tomato paste, soy sauce, maple syrup, chili powder, smoked paprika, and cumin. Cook for 2-3 minutes.
5. Add the cooked lentils and water to the skillet. Stir well to combine. Simmer for 10-15 minutes, until the mixture thickens.
6. Serve the lentil mixture on toasted burger buns.
