Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed
  • 2 Apples diced
  • 1 cup Carrots shredded
  • ¼ cup Red Onion finely chopped
  • 2 tablespoon Olive Oil
  • 2 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper freshly ground

Instructions 

  1. 1. Cook the lentils in a pot of boiling water for about 20-25 minutes until tender. Drain and let cool.
  2. 2. In a large mixing bowl, combine the cooked lentils, diced apples, shredded carrots, and chopped red onion.
  3. 3. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  4. 4. Pour the dressing over the lentil mixture and toss to combine.
  5. 5. Serve immediately or chill in the refrigerator for an hour before serving.
