Ingredients 

Scones

  • 2 cups all-purpose flour
  • ¼ cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ¼ cup coconut oil, solid
  • ¾ cup coconut milk
  • 1 tablespoon lemon zest
  • 1 tablespoon chia seeds

Instructions 

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the flour, sugar, baking powder, and salt.
  3. Cut in the solid coconut oil until the mixture resembles coarse crumbs.
  4. Stir in the coconut milk, lemon zest, and chia seeds until just combined.
  5. Turn the dough out onto a floured surface and shape into a disc about 1-inch thick. Cut into 8 wedges.
  6. Place the wedges on the prepared baking sheet and bake for 18-20 minutes, or until golden brown.
  7. Allow to cool slightly before serving. Enjoy!
