Ingredients 

Scone Ingredients

  • 2 cups All-purpose flour
  • cup Sugar
  • 1 tablespoon Baking powder
  • ½ teaspoon Salt
  • ¼ cup Coconut oil, solid
  • ¾ cup Non-dairy milk
  • 1 tablespoon Lemon juice
  • 1 tablespoon Lemon zest
  • 1 tablespoon Poppy seeds

Instructions 

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Cut in the solid coconut oil using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. Stir in the non-dairy milk, lemon juice, lemon zest, and poppy seeds until just combined.
  5. Turn the dough out onto a lightly floured surface and shape it into a disk about 1-inch thick. Cut into 8 wedges and place them on the prepared baking sheet.
  6. Bake for 18-20 minutes, or until the scones are golden brown. Let cool slightly before serving.
