Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed and drained
  • 2 cups Vegetable Broth
  • 1 cup Diced Tomatoes canned
  • 1 cup Chopped Carrots
  • 1 cup Chopped Spinach fresh or frozen
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • to taste Salt and Pepper

Instructions 

  1. 1. Preheat your oven to 375°F (190°C).
  2. 2. In a saucepan, combine lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for about 20 minutes until lentils are tender.
  3. 3. In a mixing bowl, combine cooked lentils, diced tomatoes, chopped carrots, chopped spinach, garlic powder, onion powder, cumin, paprika, salt, and pepper. Mix well.
  4. 4. Transfer the mixture to a baking dish and spread it out evenly.
  5. 5. Bake in the preheated oven for 20 minutes until the top is slightly crispy and golden.
  6. 6. Let it cool for a few minutes before serving. Enjoy!
