Main Ingredients
- 1 cup Lentils rinsed and drained
- 2 cups Vegetable Broth
- 1 cup Diced Tomatoes canned
- 1 cup Chopped Carrots
- 1 cup Chopped Spinach fresh or frozen
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- to taste Salt and Pepper
- 1. Preheat your oven to 375°F (190°C). 
- 2. In a saucepan, combine lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for about 20 minutes until lentils are tender. 
- 3. In a mixing bowl, combine cooked lentils, diced tomatoes, chopped carrots, chopped spinach, garlic powder, onion powder, cumin, paprika, salt, and pepper. Mix well. 
- 4. Transfer the mixture to a baking dish and spread it out evenly. 
- 5. Bake in the preheated oven for 20 minutes until the top is slightly crispy and golden. 
- 6. Let it cool for a few minutes before serving. Enjoy!
