Vegan Korean Kimchi Fried Rice

Main Ingredients
- 2 cups Cooked rice preferably day-old
- 1 cup Kimchi chopped
- 1 tablespoon Gochujang
- 2 tablespoon Soy sauce
- 1 tablespoon Sesame oil
- 2 cloves Garlic minced
- 1 cup Mixed vegetables carrots, peas, and corn
- 2 stalks Green onions chopped
- 1 tablespoon Sesame seeds for garnish
Heat the sesame oil in a wok over medium-high heat.
Add the minced garlic and cook until fragrant.
Add the chopped kimchi and mixed vegetables. Stir-fry for 3-4 minutes.
Add the cooked rice, gochujang, and soy sauce. Mix well and cook for another 5 minutes.
Stir in the chopped green onions and cook for another minute.
Serve hot, garnished with sesame seeds.
