Ingredients 

Main Ingredients

  • 2 tablespoon Coconut Oil
  • 1 cup Chopped Onions
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 2 tablespoon Yellow Curry Paste
  • 1 can Coconut Milk
  • 1 cup Vegetable Broth
  • 1 cup Diced Bell Peppers
  • 1 cup Diced Zucchini
  • 1 cup Cauliflower Florets
  • to taste Salt
  • to taste Pepper

Instructions 

  1. Heat coconut oil in a large pot over medium heat.
  2. Add chopped onions, garlic, and ginger. Sauté until onions are translucent.
  3. Add yellow curry paste and cook for another 2 minutes.
  4. Pour in coconut milk and vegetable broth. Stir well.
  5. Add bell peppers, zucchini, and cauliflower. Bring to a boil.
  6. Reduce heat and simmer for 20 minutes, or until vegetables are tender.
  7. Season with salt and pepper to taste. Serve hot.
