Ingredients 

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 can Chickpeas, drained and rinsed
  • 4 cups Vegetable broth
  • 4 cups Kale, chopped
  • to taste Salt and pepper

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic, ground cumin, and ground coriander. Cook for another minute.
  4. Add the chickpeas and vegetable broth. Bring to a boil, then reduce to a simmer and cook for 15 minutes.
  5. Add the chopped kale and cook for another 5 minutes, until the kale is wilted and tender.
  6. Season with salt and pepper to taste. Serve hot.
