Ingredients

  • 1.5 kg Potatoes peeled and cubed
  • 1 cup Cherry tomatoes halved
  • 1 Red onion thinly sliced
  • ¼ cup Olive oil
  • 2 tablespoon Red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic minced
  • ¼ cup Fresh basil chopped
  • To taste Salt and pepper

Instructions 

  1. 1. Boil the potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and let cool.
  2. 2. In a large mixing bowl, combine the olive oil, red wine vinegar, Dijon mustard, and minced garlic. Whisk until well combined.
  3. 3. Add the cooled potatoes, cherry tomatoes, red onion, and fresh basil to the bowl. Toss to coat everything evenly with the dressing.
  4. 4. Season with salt and pepper to taste. Serve immediately or refrigerate for later.
