Vegan Instant Pot Red Lentil Soup Recipe
A hearty and nutritious vegan red lentil soup made easily in an Instant Pot.

Main Ingredients
- 1 cup red lentils rinsed
- 1 medium onion chopped
- 2 cloves garlic minced
- 1 medium carrot chopped
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 1 teaspoon salt to taste
- ¼ teaspoon black pepper to taste
1. Set the Instant Pot to sauté mode and add a splash of water or vegetable broth.
2. Add the chopped onion and garlic, sauté until softened.
3. Add the chopped carrot, rinsed red lentils, vegetable broth, ground cumin, ground turmeric, salt, and black pepper.
4. Close the lid, set the valve to sealing, and cook on high pressure for 10 minutes.
5. Once the cooking time is up, allow the pressure to release naturally for 10 minutes, then quick release any remaining pressure.
6. Open the lid, stir the soup, and adjust seasoning if needed. Serve hot.
