Ingredients 

Main Ingredients

  • 1 can Hearts of palm drained and chopped
  • 1 cup Cherry tomatoes halved
  • 1 Cucumber diced
  • ¼ cup Red onion finely chopped
  • 1 Jalapeño seeded and minced
  • ¼ cup Cilantro chopped
  • 2 Limes juiced
  • 1 tablespoon Olive oil
  • ½ teaspoon Salt or to taste
  • ¼ teaspoon Black pepper freshly ground

Instructions 

  1. In a large mixing bowl, combine hearts of palm, cherry tomatoes, cucumber, red onion, jalapeño, and cilantro.
  2. Pour lime juice and olive oil over the mixture. Season with salt and black pepper.
  3. Toss everything together until well combined. Adjust seasoning if needed.
  4. Let it sit for 10-15 minutes to allow flavors to meld. Serve chilled.
