Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 cup Onion, chopped
  • 1 cup Bell Pepper, chopped
  • 1 cup Celery, chopped
  • 3 cloves Garlic, minced
  • 1 cup Okra, sliced
  • 1 can Diced Tomatoes
  • 4 cups Vegetable Broth
  • 1 cup Cooked Rice
  • 1 teaspoon Thyme
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • ½ teaspoon Cayenne Pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, bell pepper, and celery. Cook until softened, about 5 minutes.
  3. Add garlic and cook for another minute.
  4. Add okra and cook for 5 minutes.
  5. Stir in diced tomatoes, vegetable broth, thyme, paprika, salt, black pepper, and cayenne pepper. Bring to a boil.
  6. Reduce heat and simmer for 30 minutes.
  7. Serve hot over cooked rice.
