Main Ingredients
- 2 tablespoon Olive Oil
- 1 cup Onion, chopped
- 1 cup Bell Pepper, chopped
- 1 cup Celery, chopped
- 3 cloves Garlic, minced
- 1 cup Okra, sliced
- 1 can Diced Tomatoes
- 4 cups Vegetable Broth
- 1 cup Cooked Rice
- 1 teaspoon Thyme
- 1 teaspoon Paprika
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- ½ teaspoon Cayenne Pepper
Heat olive oil in a large pot over medium heat.
Add onion, bell pepper, and celery. Cook until softened, about 5 minutes.
Add garlic and cook for another minute.
Add okra and cook for 5 minutes.
Stir in diced tomatoes, vegetable broth, thyme, paprika, salt, black pepper, and cayenne pepper. Bring to a boil.
Reduce heat and simmer for 30 minutes.
Serve hot over cooked rice.
