Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 cup Onion, chopped
  • 3 cloves Garlic, minced
  • 16 oz Mushrooms, sliced
  • 4 cups Vegetable Broth
  • 1 cup Coconut Milk
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 tablespoon Fresh Thyme

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent, about 5 minutes.
  3. Add minced garlic and cook for another minute.
  4. Add sliced mushrooms and cook until they release their juices and become tender, about 10 minutes.
  5. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes.
  6. Stir in coconut milk, salt, pepper, and fresh thyme. Simmer for another 5 minutes.
  7. Use a blender to puree the soup until smooth. Serve hot.
