Vegan Garbanzo Bean Soup
A hearty and healthy vegan soup made with garbanzo beans and fresh vegetables.

Main Ingredients
- 2 tablespoon Olive Oil
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 2 carrots Carrots, sliced
- 2 celery stalks Celery, sliced
- 4 cups Vegetable Broth
- 2 cans Garbanzo Beans, drained and rinsed
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- to taste Salt and Pepper
- 1 cup Spinach, chopped
Heat olive oil in a large pot over medium heat.
Add chopped onion and sauté until translucent, about 5 minutes.
Add minced garlic and cook for another minute.
Add sliced carrots and celery, cook for 5 more minutes.
Pour in vegetable broth and bring to a boil.
Add garbanzo beans, cumin, paprika, salt, and pepper. Reduce heat and simmer for 20 minutes.
Stir in chopped spinach and cook until wilted, about 2 minutes.
Serve hot and enjoy!
