Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 2 carrots Carrots, sliced
  • 2 celery stalks Celery, sliced
  • 4 cups Vegetable Broth
  • 2 cans Garbanzo Beans, drained and rinsed
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • to taste Salt and Pepper
  • 1 cup Spinach, chopped

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté until translucent, about 5 minutes.
  3. Add minced garlic and cook for another minute.
  4. Add sliced carrots and celery, cook for 5 more minutes.
  5. Pour in vegetable broth and bring to a boil.
  6. Add garbanzo beans, cumin, paprika, salt, and pepper. Reduce heat and simmer for 20 minutes.
  7. Stir in chopped spinach and cook until wilted, about 2 minutes.
  8. Serve hot and enjoy!
