Ingredients 

Main Ingredients

  • 1 head Cauliflower cut into florets
  • 2 medium Sweet Potatoes peeled and diced
  • 1 cup Red Lentils rinsed
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 1 tablespoon Curry Powder
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 can Coconut Milk
  • 4 cups Vegetable Broth
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. Heat a large pot over medium heat. Add a splash of oil, then add the chopped onion and cook until translucent.
  2. 2. Add the minced garlic, curry powder, ground cumin, and ground coriander. Cook for another minute until fragrant.
  3. 3. Add the cauliflower florets, diced sweet potatoes, and rinsed red lentils to the pot. Stir to combine.
  4. 4. Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for about 20 minutes, or until the vegetables are tender.
  5. 5. Stir in the coconut milk and season with salt and black pepper to taste. Simmer for another 5 minutes.
  6. 6. Use an immersion blender to blend the soup to your desired consistency. Serve hot.
