Vegan Crockpot Corn Chowder

Main Ingredients
- 4 cups Corn kernels fresh or frozen
- 2 cups Vegetable broth
- 1 cup Coconut milk full-fat
- 2 units Potatoes diced
- 1 unit Onion chopped
- 2 cloves Garlic minced
- 1 teaspoon Salt to taste
- 0.5 teaspoon Black pepper to taste
- 2 tablespoon Olive oil
1. Add all ingredients to the crockpot.
2. Stir to combine.
3. Cook on low for 4-6 hours or until potatoes are tender.
4. Use an immersion blender to blend some of the soup for a creamier texture.
5. Serve hot, garnished with fresh herbs if desired.
