Ingredients 

Main Ingredients

  • 4 cups Corn kernels fresh or frozen
  • 2 cups Vegetable broth
  • 1 cup Coconut milk full-fat
  • 2 units Potatoes diced
  • 1 unit Onion chopped
  • 2 cloves Garlic minced
  • 1 teaspoon Salt to taste
  • 0.5 teaspoon Black pepper to taste
  • 2 tablespoon Olive oil

Instructions 

  1. 1. Add all ingredients to the crockpot.

  3. 3. Cook on low for 4-6 hours or until potatoes are tender.
  4. 4. Use an immersion blender to blend some of the soup for a creamier texture.
  5. 5. Serve hot, garnished with fresh herbs if desired.
