Ingredients 

Main Ingredients

  • 1 lb asparagus trimmed and cut into 1-inch pieces
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 4 cups vegetable broth
  • 1 cup coconut milk full-fat
  • 2 tablespoon olive oil
  • to taste salt
  • to taste black pepper freshly ground

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until softened.
  2. 2. Add asparagus and cook for a few minutes until it starts to soften.
  3. 3. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for about 15 minutes, until asparagus is tender.
  4. 4. Remove from heat and let cool slightly. Transfer to a blender and blend until smooth.
  5. 5. Return soup to the pot, stir in coconut milk, and heat through. Season with salt and pepper to taste.
  6. 6. Serve hot and enjoy!
