Ingredients 

Main Ingredients

  • 1 cup red lentils
  • 1 can coconut milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon ground ginger
  • 1 can diced tomatoes
  • 2 cups vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions 

  1. Rinse lentils under cold water.
  2. In a large pot, sauté onion and garlic until soft.
  3. Add curry powder, turmeric, cumin, and ground ginger. Cook for 1 minute.
  4. Add lentils, coconut milk, diced tomatoes, and vegetable broth. Bring to a boil.
  5. Reduce heat and simmer for 25-30 minutes, until lentils are tender.
  6. Season with salt and pepper. Garnish with fresh cilantro.
