Instructions
Rinse lentils under cold water.
In a large pot, sauté onion and garlic until soft.
Add curry powder, turmeric, cumin, and ground ginger. Cook for 1 minute.
Add lentils, coconut milk, diced tomatoes, and vegetable broth. Bring to a boil.
Reduce heat and simmer for 25-30 minutes, until lentils are tender.
Season with salt and pepper. Garnish with fresh cilantro.
