Ingredients 

Main Ingredients

  • 1 block Tofu firm, drained and cubed
  • 1 tablespoon Coconut Oil
  • 1 can Coconut Milk
  • 1 cup Vegetable Broth
  • 2 tablespoon Curry Powder
  • 1 teaspoon Salt
  • 2 cups Mixed Vegetables chopped (e.g., bell peppers, carrots, broccoli)

Instructions 

  1. 1. Heat coconut oil in a large pan over medium heat.
  2. 2. Add tofu and cook until golden brown. Remove and set aside.
  3. 3. In the same pan, add curry powder and cook for 1 minute.
  4. 4. Add coconut milk, vegetable broth, and salt. Stir well.
  5. 5. Add mixed vegetables and cook until tender.
  6. 6. Return tofu to the pan and simmer for 5 minutes.
  7. 7. Serve hot with rice or naan.
