Ingredients 

Main Ingredients

  • 2 cups Coconut Milk
  • 1 cup Vegetable Broth
  • 1 tablespoon Curry Powder
  • 2 cups Mixed Vegetables (carrots, bell peppers, broccoli) chopped
  • 8 oz Pasta your choice
  • 1 tablespoon Olive Oil
  • 2 cloves Garlic minced
  • 1 inch Ginger grated
  • to taste Salt and Pepper

Instructions 

  1. 1. Cook the pasta according to package instructions. Drain and set aside.
  2. 2. In a large pot, heat olive oil over medium heat. Add minced garlic and grated ginger, sauté for 2 minutes.
  3. 3. Add curry powder and cook for another minute until fragrant.
  4. 4. Pour in coconut milk and vegetable broth, bring to a simmer.
  5. 5. Add mixed vegetables and cook until tender, about 10 minutes.
  6. 6. Stir in cooked pasta, season with salt and pepper to taste. Serve hot.
