Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 Bell Pepper, chopped
  • 2 cups Diced Tomatoes
  • 1 cup Vegetable Broth
  • 1 can Kidney Beans, drained and rinsed
  • 1 can Black Beans, drained and rinsed
  • 1 tablespoon Chili Powder
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • to taste Salt and Pepper

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and chopped bell pepper. Cook for another 5 minutes.
  4. Stir in the diced tomatoes, vegetable broth, kidney beans, black beans, chili powder, cumin, and paprika.
  5. Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes.
  6. Season with salt and pepper to taste. Serve hot.
