Vegan Chunky Chili Recipe

Main Ingredients
- 1 tablespoon Olive Oil
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1 Bell Pepper, chopped
- 2 cups Diced Tomatoes
- 1 cup Vegetable Broth
- 1 can Kidney Beans, drained and rinsed
- 1 can Black Beans, drained and rinsed
- 1 tablespoon Chili Powder
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- to taste Salt and Pepper
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until translucent, about 5 minutes.
Add the minced garlic and chopped bell pepper. Cook for another 5 minutes.
Stir in the diced tomatoes, vegetable broth, kidney beans, black beans, chili powder, cumin, and paprika.
Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes.
Season with salt and pepper to taste. Serve hot.
