Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 large Onion, chopped
  • 2 cloves Garlic, minced
  • 2 cups Tomatillos, husked and chopped
  • 1 cup Green Bell Pepper, chopped
  • 1 cup Zucchini, chopped
  • 1 cup Vegetable Broth
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 can Cannellini Beans, drained and rinsed
  • 1 cup Fresh Cilantro, chopped
  • to taste Salt and Pepper

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and garlic, and sauté until softened.
  3. Add the tomatillos, green bell pepper, and zucchini. Cook for about 5 minutes.
  4. Pour in the vegetable broth, and add the ground cumin and coriander. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Use a blender to puree the mixture until smooth. Return to the pot.
  6. Add the cannellini beans and chopped cilantro. Simmer for another 10 minutes.
  7. Season with salt and pepper to taste. Serve hot.
