Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 large Onion, diced
  • 3 cloves Garlic, minced
  • 1 medium Bell Pepper, diced
  • 2 cans Diced Tomatoes (14.5 oz each)
  • 1 can Black Beans, drained and rinsed (15 oz)
  • 1 can Kidney Beans, drained and rinsed (15 oz)
  • 1 cup Corn Kernels fresh or frozen
  • 2 tablespoon Chili Powder
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste
  • 2 cups Vegetable Broth

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook until translucent, about 5 minutes.
  3. Add minced garlic and diced bell pepper, cook for another 5 minutes.
  4. Stir in diced tomatoes, black beans, kidney beans, corn, chili powder, cumin, paprika, salt, and pepper.
  5. Pour in vegetable broth and bring to a boil.
  6. Reduce heat and let simmer for 30 minutes, stirring occasionally.
  7. Adjust seasoning to taste and serve hot.
