- 4 cups Frozen French Fries or homemade
Chili
- 1 tablespoon Olive Oil
- 1 medium Onion diced
- 2 cloves Garlic minced
- 1 cup Tomato Sauce
- 1 cup Black Beans cooked or canned, drained and rinsed
- 1 cup Corn cooked or canned, drained
- 1 tablespoon Chili Powder
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- to taste Salt and Pepper
Cheese Sauce
- 1 cup Vegan Cheese shredded
- ½ cup Unsweetened Almond Milk
1. Preheat your oven and cook the fries according to package instructions or until crispy.
2. In a saucepan, heat olive oil over medium heat. Add diced onion and cook until translucent.
3. Add minced garlic and cook for another minute.
4. Stir in tomato sauce, black beans, corn, chili powder, cumin, paprika, salt, and pepper. Simmer for 10-15 minutes.
5. In a small saucepan, heat almond milk over medium heat. Add shredded vegan cheese and stir until melted and smooth.
6. Assemble the fries on a plate, top with chili, and drizzle with cheese sauce. Serve immediately.
