Vegan Chickpeas with Kale and Cilantro Lime

Main Ingredients
- 2 tablespoon olive oil
- 1 can chickpeas, drained and rinsed 15 oz can
- 4 cups kale, chopped
- 1 cup cherry tomatoes, halved
- 1 bunch cilantro, chopped
- 1 lime, juiced
- 1 teaspoon cumin
- 1 teaspoon salt
- ½ teaspoon black pepper
1. Heat olive oil in a large skillet over medium heat.
2. Add chickpeas and cook for 5 minutes, stirring occasionally.
3. Add kale and cook until wilted, about 5 minutes.
4. Add cherry tomatoes, cilantro, lime juice, cumin, salt, and pepper. Stir well to combine.
5. Cook for another 5 minutes, until everything is heated through.
6. Serve warm and enjoy!
