Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 1 tablespoon Ginger grated
  • 2 tablespoon Curry Powder
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 can Chickpeas drained and rinsed
  • 1 can Coconut Milk
  • 1 cup Diced Tomatoes
  • 1 cup Vegetable Broth
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste
  • 1 cup Spinach fresh

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and grated ginger, cook for another 2 minutes.
  4. Stir in the curry powder, ground cumin, and ground coriander. Cook for 1 minute.
  5. Add the chickpeas, coconut milk, diced tomatoes, and vegetable broth. Bring to a simmer.
  6. Season with salt and black pepper to taste. Let it simmer for 20 minutes.
  7. Stir in the fresh spinach and cook until wilted, about 2 minutes.
  8. Serve hot with rice or naan bread.
