Ingredients 

Main Ingredients

  • 1 bunch Carrot tops chopped
  • 2 cups Carrots chopped
  • 1 cup Celery chopped
  • 1 cup Onion chopped
  • 3 cloves Garlic minced
  • 4 cups Vegetable broth
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black pepper to taste

Instructions 

  1. 1. Heat a large pot over medium heat. Add a splash of vegetable broth and sauté the onions, garlic, carrots, and celery until softened, about 5-7 minutes.
  2. 2. Add the chopped carrot tops and continue to sauté for another 2-3 minutes.
  3. 3. Pour in the vegetable broth, bring to a boil, then reduce heat and simmer for 20 minutes.
  4. 4. Use a blender to puree the soup until smooth. Return to the pot and season with salt and pepper to taste.
  5. 5. Serve hot and enjoy!
