Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon curry powder
  • 6 cups carrots, peeled and chopped
  • 4 cups vegetable broth
  • 1 can coconut milk
  • to taste salt and pepper

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. 3. Stir in the garlic, ginger, and curry powder, and cook for another 2 minutes.
  4. 4. Add the chopped carrots and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the carrots are tender.
  5. 5. Use a blender to puree the soup until smooth.
  6. 6. Return the soup to the pot, stir in the coconut milk, and season with salt and pepper to taste. Heat through before serving.
