2. Pop the popcorn kernels using your preferred method. Spread the popped popcorn on the prepared baking sheet.
3. In a large pot, combine the coconut sugar, coconut oil, and maple syrup. Cook over medium heat, stirring constantly, until the mixture comes to a boil.
4. Once boiling, reduce the heat to low and let it simmer for 5 minutes, stirring occasionally.
5. Remove the pot from heat and stir in the vanilla extract and salt.
6. Pour the caramel mixture over the popcorn and gently stir to coat evenly.
7. Bake the caramel-coated popcorn in the preheated oven for 15-20 minutes, stirring every 5 minutes to prevent burning.
8. Remove from the oven and let it cool completely before serving.
