Vegan Butternut Curry
A delicious and hearty vegan curry made with butternut squash.

Main Ingredients
- 1 large Butternut Squash peeled and cubed
- 1 can Coconut Milk full-fat
- 1 large Onion diced
- 3 cloves Garlic minced
- 1 tablespoon Curry Powder
- 1 teaspoon Ground Cumin
- 1 teaspoon Ground Coriander
- 1 cup Vegetable Broth
- to taste Salt
- to taste Black Pepper
- 1 tablespoon Olive Oil
1. Heat the olive oil in a large pot over medium heat.
2. Add the diced onion and cook until translucent, about 5 minutes.
3. Add the minced garlic and cook for another minute.
4. Stir in the curry powder, ground cumin, and ground coriander. Cook for 1-2 minutes until fragrant.
5. Add the cubed butternut squash and stir to coat with the spices.
6. Pour in the coconut milk and vegetable broth. Bring to a simmer.
7. Reduce heat to low, cover, and let it cook for about 20-25 minutes, or until the butternut squash is tender.
8. Season with salt and black pepper to taste.
9. Serve hot with rice or naan bread.
