  • 1 cup Cooked Rice
  • 1 cup Black Beans rinsed and drained
  • 1 cup Corn Kernels fresh or frozen
  • 1 cup Diced Tomatoes
  • 1 cup Diced Avocado
  • 4 large Tortillas
  • 1 tablespoon Olive Oil
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Instructions 

  1. 1. Heat the olive oil in a pan over medium heat.
  2. 2. Add the cooked rice, black beans, corn, and diced tomatoes to the pan.
  3. 3. Season with cumin, chili powder, salt, and pepper. Stir well and cook for 5-7 minutes.
  4. 4. Warm the tortillas in a separate pan or microwave.
  5. 5. Fill each tortilla with the cooked mixture and top with diced avocado.
  6. 6. Roll up the tortillas and serve warm.
