Vegan Blueberry and Banana Oatmeal Muffins Recipe

- 2 cups rolled oats
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 2 ripe bananas, mashed
- 1 cup unsweetened almond milk
- ⅓ cup maple syrup
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
In a large bowl, mix together the rolled oats, flour, baking powder, baking soda, and salt.
In another bowl, combine the mashed bananas, almond milk, maple syrup, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Gently fold in the blueberries.
Divide the batter evenly among the muffin cups.
Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
