Vegan Black-Eyed Pea Soup

- 1 cup dried black-eyed peas soaked overnight
- 1 medium onion chopped
- 2 cloves garlic minced
- 2 medium carrots chopped
- 2 stalks celery chopped
- 1 can diced tomatoes 14.5 oz can
- 4 cups vegetable broth
- 1 teaspoon thyme dried
- 1 teaspoon smoked paprika
- to taste salt and pepper
- 2 tablespoon olive oil
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion, garlic, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes.
3. Add the soaked black-eyed peas, diced tomatoes, vegetable broth, thyme, and smoked paprika. Stir to combine.
4. Bring the mixture to a boil, then reduce the heat and let it simmer for about 45 minutes, or until the black-eyed peas are tender.
5. Season with salt and pepper to taste. Serve hot.
