Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 Carrot, diced
  • 1 Celery stalk, diced
  • 2 cans Black Beans, drained and rinsed
  • 4 cups Vegetable Broth
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Chili Powder
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 Lime, juiced
  • ¼ cup Cilantro, chopped

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, carrot, and celery. Cook until vegetables are tender.
  3. Add black beans, vegetable broth, cumin, chili powder, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer for 20 minutes.
  5. Use a blender to puree the soup until smooth.
  6. Stir in lime juice and cilantro before serving.
