Ingredients

  • 1 can black beans drained and rinsed
  • 1 cup corn kernels fresh or frozen
  • 1 cup bell pepper diced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 large tortillas
  • 1 cup vegan cheese shredded

Instructions 

  1. 1. In a mixing bowl, combine black beans, corn, bell pepper, cumin, and chili powder.
  2. 2. Heat a skillet over medium heat. Place a tortilla in the skillet and sprinkle half with vegan cheese.
  3. 3. Add a portion of the black bean mixture on top of the cheese. Fold the tortilla in half.
  4. 4. Cook for 2-3 minutes on each side until golden brown and cheese is melted. Repeat with remaining tortillas.
