Vegan Black Bean Burger Soup Recipe

Main Ingredients
- 2 cups Black beans cooked
- 1 cup Corn kernels fresh or frozen
- 1 cup Diced tomatoes canned
- 1 medium Onion chopped
- 2 cloves Garlic minced
- 4 cups Vegetable broth
- 1 teaspoon Cumin ground
- 1 teaspoon Chili powder
- 1 teaspoon Salt
- ½ teaspoon Black pepper
- 2 tablespoon Olive oil
1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and sauté until softened.
2. Add black beans, corn, diced tomatoes, vegetable broth, cumin, chili powder, salt, and black pepper. Stir well.
3. Bring to a boil, then reduce heat and simmer for 20 minutes.
4. Use a blender to puree part of the soup for a thicker consistency, if desired.
5. Serve hot and enjoy!
