Vegan Black Bean and Sweet Potato Salad

Main Ingredients
- 2 medium Sweet Potatoes peeled and cubed
- 1 can Black Beans drained and rinsed
- 1 cup Corn frozen or fresh
- 1 medium Red Bell Pepper diced
- 1 small Red Onion diced
- 1 handful Cilantro chopped
Dressing
- 3 tablespoon Olive Oil
- 2 tablespoon Lime Juice freshly squeezed
- 1 teaspoon Cumin
- 1 teaspoon Salt
- 0.5 teaspoon Black Pepper
Preheat oven to 400°F (200°C).
Place cubed sweet potatoes on a baking sheet, drizzle with olive oil, and roast for 25-30 minutes until tender.
In a large mixing bowl, combine black beans, corn, red bell pepper, red onion, and cilantro.
In a small bowl, whisk together olive oil, lime juice, cumin, salt, and black pepper.
Add roasted sweet potatoes to the mixing bowl with the other ingredients.
Pour dressing over the salad and toss to combine.
Serve immediately or chill in the fridge for later.
