Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 1 can black beans, drained and rinsed
  • 1 can white beans, drained and rinsed
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt to taste
  • 0.5 teaspoon black pepper to taste

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion, garlic, carrot, and celery. Cook until vegetables are tender, about 5-7 minutes.
  3. Add the black beans, white beans, vegetable broth, cumin, and paprika. Stir to combine.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Season with salt and black pepper to taste. Serve hot.
