Vegan Beefless Stew

Main Ingredients
- 2 tablespoon olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 3 cups vegetable broth
- 2 cups diced tomatoes
- 2 cups potatoes, diced
- 2 cups carrots, sliced
- 1 cup peas
- 1 cup corn
- 1 teaspoon thyme
- 1 teaspoon rosemary
- to taste salt and pepper
Heat the olive oil in a large pot over medium heat.
Add the onion and garlic, and sauté until softened.
Add the vegetable broth, tomatoes, potatoes, and carrots. Bring to a boil.
Reduce heat and simmer for 30 minutes, or until vegetables are tender.
Add the peas, corn, thyme, rosemary, salt, and pepper. Simmer for another 10 minutes.
Serve hot and enjoy!
