Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 3 cups vegetable broth
  • 2 cups diced tomatoes
  • 2 cups potatoes, diced
  • 2 cups carrots, sliced
  • 1 cup peas
  • 1 cup corn
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • to taste salt and pepper

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic, and sauté until softened.
  3. Add the vegetable broth, tomatoes, potatoes, and carrots. Bring to a boil.
  4. Reduce heat and simmer for 30 minutes, or until vegetables are tender.
  5. Add the peas, corn, thyme, rosemary, salt, and pepper. Simmer for another 10 minutes.
  6. Serve hot and enjoy!
