Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 cups mushrooms, sliced
  • 2 carrots carrots, chopped
  • 2 stalks celery, chopped
  • 8 cups water
  • 2 tablespoon soy sauce
  • 2 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon black pepper

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and garlic, and sauté until translucent.
  3. Add the mushrooms, carrots, and celery. Cook for another 5 minutes.
  4. Pour in the water, soy sauce, and tomato paste. Stir well.
  5. Add the thyme, rosemary, and black pepper. Bring to a boil.
  6. Reduce heat and let it simmer for 45 minutes.
  7. Strain the broth and discard the solids. Serve hot.
