Vegan Beef Broth Recipe

Main Ingredients
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 cups mushrooms, sliced
- 2 carrots carrots, chopped
- 2 stalks celery, chopped
- 8 cups water
- 2 tablespoon soy sauce
- 2 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon black pepper
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and garlic, and sauté until translucent.
Add the mushrooms, carrots, and celery. Cook for another 5 minutes.
Pour in the water, soy sauce, and tomato paste. Stir well.
Add the thyme, rosemary, and black pepper. Bring to a boil.
Reduce heat and let it simmer for 45 minutes.
Strain the broth and discard the solids. Serve hot.
