- 4 Sweet Potatoes medium-sized
- 2 tablespoon Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Black Pepper freshly ground
Preheat your oven to 400°F (200°C).
Wash and scrub the sweet potatoes thoroughly.
Prick each sweet potato several times with a fork.
Rub each sweet potato with olive oil, then sprinkle with salt and pepper.
Place the sweet potatoes on a baking sheet lined with parchment paper.
