Ingredients

  • 1 cup Polenta
  • 4 cups Water
  • 1 head Radicchio chopped
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a saucepan, bring the water to a boil. Slowly whisk in the polenta and reduce the heat to low. Cook, stirring frequently, until thickened, about 15 minutes.
  3. Stir in the salt and black pepper. Pour the polenta into a baking dish and smooth the top.
  4. In a separate bowl, toss the chopped radicchio with olive oil. Spread the radicchio evenly over the polenta.
  5. Bake in the preheated oven for 30 minutes, until the radicchio is wilted and slightly crispy.
  6. Remove from the oven and let cool slightly before serving.
