Main Ingredients
- ½ cup Aquafaba (liquid from a can of chickpeas)
- 1 tablespoon Lemon juice
- 1 teaspoon Dijon mustard
- ½ teaspoon Salt
- 1 cup Neutral oil (like canola or sunflower)
1. Add aquafaba, lemon juice, Dijon mustard, and salt to a blender.
2. Blend on high for about 30 seconds until frothy.
3. With the blender running on medium speed, slowly drizzle in the oil until the mixture thickens and emulsifies.
4. Taste and adjust seasoning if necessary.
5. Transfer to a jar and refrigerate. It will thicken further as it chills.
