Ingredients 

Main Ingredients

  • 12 oz Fettuccine or any pasta of choice
  • 1 cup Cashews soaked in hot water for 15 minutes
  • 2 cups Vegetable Broth
  • 3 cloves Garlic minced
  • 2 tablespoon Nutritional Yeast
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste
  • 2 cups Mixed Vegetables such as broccoli, bell peppers, and peas

Instructions 

  1. 1. Cook the pasta according to package instructions. Drain and set aside.
  2. 2. In a blender, combine soaked cashews, vegetable broth, minced garlic, nutritional yeast, lemon juice, salt, and black pepper. Blend until smooth and creamy.
  3. 3. In a large skillet, sauté the mixed vegetables until tender.
  4. 4. Add the cooked pasta and blended sauce to the skillet with the vegetables. Toss to combine and heat through.
  5. 5. Serve hot and enjoy!
