Main Ingredients
- 4 medium Russet Potatoes
- 2 tablespoons Olive Oil
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- to taste Salt
- to taste Black Pepper
- ½ cup Vegan Cheese shredded
- ¼ cup Green Onions chopped
Preheat your air fryer to 400°F (200°C).
Wash and scrub the potatoes, then poke a few holes in them with a fork.
Rub the potatoes with olive oil and place them in the air fryer. Cook for 20 minutes or until tender.
Once cooked, let the potatoes cool slightly. Cut them in half and scoop out most of the flesh, leaving a thin layer inside the skins.
In a bowl, mix the potato flesh with garlic powder, onion powder, salt, and pepper. Spoon the mixture back into the potato skins.
Top with shredded vegan cheese and place back in the air fryer for another 5 minutes or until the cheese is melted and bubbly.
Garnish with chopped green onions and serve immediately.
