Vegan African Peanut Stew

- 1 tablespoon Olive oil
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1 Sweet potato, peeled and cubed
- 1 can Diced tomatoes (14.5 oz)
- 1 cup Vegetable broth
- ½ cup Peanut butter
- 1 teaspoon Ground cumin
- 1 teaspoon Ground coriander
- ½ teaspoon Red pepper flakes
- 1 bunch Kale, chopped
- to taste Salt and pepper
Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until softened.
Add the sweet potato, diced tomatoes, vegetable broth, peanut butter, cumin, coriander, and red pepper flakes. Stir well to combine.
Bring the mixture to a boil, then reduce the heat and simmer for about 20 minutes, or until the sweet potatoes are tender.
Add the chopped kale and cook for an additional 5 minutes, until the kale is wilted. Season with salt and pepper to taste.
Serve hot, garnished with chopped peanuts or fresh herbs if desired.
