Instructions
Heat the coconut oil in a large pot over medium heat.
Add the chopped onion and cook until translucent, about 5 minutes.
Add the minced garlic and ginger, and cook for another 2 minutes.
Stir in the red curry paste and cook for 1 minute.
Add the coconut milk and vegetable broth, and bring to a simmer.
Add the mixed vegetables and cook until tender, about 10-15 minutes.
Stir in the soy sauce and lime juice.
Serve hot, garnished with fresh cilantro.
