Ingredients

  • 1 cup bulgur wheat fine or medium grain
  • 2 bunches fresh parsley finely chopped
  • ½ cup fresh mint finely chopped
  • 4 medium tomatoes diced
  • 1 medium cucumber diced
  • ¼ cup extra virgin olive oil
  • ¼ cup lemon juice freshly squeezed
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper freshly ground

Instructions 

  1. 1. Soak the bulgur wheat in hot water for about 15 minutes, then drain well.
  2. 2. In a large mixing bowl, combine the chopped parsley, mint, tomatoes, and cucumber.
  3. 3. Add the drained bulgur wheat to the bowl and mix well.
  4. 4. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  5. 5. Pour the dressing over the salad and toss to combine.
  6. 6. Let the tabbouleh sit for at least 30 minutes before serving to allow the flavors to meld.
